Ingrendients:
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 3 tablespoons sugar
- 2 large eggs, lightly beaten
- 3 cups buttermilk
- 50g unsalted butter, melted
- 1 cup fresh blueberries (option
Hot Chocolate Sauce
- 100g dark chocolate
- 100ml single cream
Whisk together flour, baking powder, baking soda, salt, and sugar in a medium bowl. Add eggs, buttermilk, and melted butter; whisk to combine. Batter should have small to medium lumps.
Lightly coat skillet with oil. Heat to medium low. For each pancake, spoon 2 to 3 tablespoons of batter onto skillet, using the back of the spoon to spread batter into a round (you should be able to fit 2 to 3 in a large skillet).. Cook until bubbles appear on top, about 2- 3 minutes. Flip and cook until bottom is golden brown, about 1-2 minutes. Re-oil the skillet and repeat for the next batch of pancakes.
Hot Chocolate Sauce :
Heat the chocolate and single cream in a small saucepan, stirring, until melted and smooth. Pour the hot chocolate sauce over each stack and served.
