Avoca Blueberry Muffins



Muffins are terrifically easy to make,.They’re delicious as an on-the-go breakfast or an afternoon treat – or both. This recipie is from  Avoca: Tea Time. 


  • 450g self – raising flour
  • 225g caster sugar
  • 225g unsalted butter
  • 1 teaspoon baking power
  • 225 milk
  • 2 medium- sized eggs, beaten
  • 200g blueberrys ( you can also use 200g raspberries or 1 pear trimmed and diced)

Preheat the oven to 180°C and have 15 muffins tins ready. Mix the flour, caster sugar and baking powder together in a large bowl and make a well in the centre. Heat the milk and butter together until the butter melts. Allow to cool, then add to the dry mixture with the eggs.

Spoon into the muffin cases and bake for 20 minutes (6-8 if you are making the mini ones)

    Really nice, I added chai seeds in, a tiny bit of dark chocolate and mixed seeds on top!
