Looking for cakes you don’t need to bake?Try my 3 Bit cake. The layers of graham crackers, custard pudding and caramel topped with grated chocolate.
- 57 graham crackers (400g-500g)
- 500g caramel ( Dulce de Leche)
- 3 cups milk
- 3/4 cup sugar
- 1 teaspoon vanilla extract
- 130g unsalted butter
- 4 tbsp flour
- 5 tbsp corn starch
- 4 eggs
- 500 ml double cream
- 1 tbsp icing sugar
- 80g dark chocolate, grated
Line the form (8″ x 12″ or smaller) with a baking paper. Place one layer of biscuits on the bottom. You may need to cut and shape the biscuits to fit nicely. Spread the caramel. Repeat layers.
Bring to boil 2 cups of milk with butter and sugar. Mix the rest of milk with eggs, vanilla extract, flour and corn starch. Pour it slowly to the boiling milk mixture, whisking all the time. Boil for 1-2 minutes.
Pour the custard onto the biscuits. Put another layer of cookies to cover entire surface.
Place in the fridge to chill for at least 2 hours. After that time remove the cake from the fridge.
Whip the double cream along with sugar until medium peaks form. Spread the whipped cream
Sprinkle the grated chocolate for decoration. Store in the fridge.
